Braised Pork Tomato Alfredo Dijon

1 T. olive oil
3 cloves garlic, finely chopped
1/4 c. onion, chopped
1/2 tsp. rosemary
1/2 tsp. pepper
2 1/2 lbs. boneless pork sirloin chops, cut into halves
1/4 c. dijon mustard
1 can (14.5 oz.) diced recipe-ready tomatoes
1 c. alfredo sauce (use half of a 16 oz. jar)

In large, non-stick skillet, saute garlic and onion in oil until soft. Add pork, sprinkle with pepper and rosemary, and brown lightly on all sides over medium heat. Add mustard and undrained tomatoes. Cover, reduce heat and simmer, stirring occasionally, until pork is thoroughly cooked and sauce is blended (allow 20 mins.). If sauce is watery, uncover and boil to reduce sauce until slightly thickened. Stir in alfredo sauce and heat only until warm. Serve with noodles, rice or potatoes. Serves at least six.
